Considering my mother named me the supreme ultimate of Irish names after the Hill of Tara in Ireland—and being direct descendants of Colonel John McDowell of the haunted house lore in Bladen County, NC—we made an incredible shepherd’s pie for St. Patrick’s Day weekend!
Kerrygold® butter and Dubliner cheese gave the mash character, and Mom crowned the center with stuffing atop the beef mince, peas and carrots and rich gravy.
Our Irish blood comprises part of who are. Every drop of everything each of us is matters; we would not be who we are without Ireland. 🇮🇪
