Posset began as a traditional English drink that dates back to the medieval period. It originated as a warm, curdled milk drink that was often flavored with spices and sweetened with sugar. The history of posset can be traced back to the 14th century, when it was commonly consumed as a remedy for various ailments.

Over time, posset evolved into a more indulgent and celebratory drink. It became popular among the upper classes and was often served at banquets and feasts. During the Tudor period in England, posset gained even more popularity and became a favorite drink among royalty. Queen Elizabeth I was known to enjoy posset, and it was often served as a dessert at royal gatherings. The drink was also associated with weddings and was sometimes used as a traditional toast to the newlyweds.

In the 17th century, the recipe for posset further evolved with the introduction of citrus fruits, such as lemons, which added a tangy and refreshing flavor to the drink. The curdling process was also refined, and the drink became more like a creamy custard or pudding.

Today, posset is made as a traditional dessert, with variations that include different fruits and garnishings. The curdled milk aspect of the original posset has largely been replaced with heavy cream.
